Mango Pudding Delite

The whole family will love this one – it’s super easy, tasty and packs a lot of nutrients! A win-win.


1 large mango of choice (Julie is great for this recipe)
1 handful of coconut jelly/medium soft flesh
1 cup of soaked cashews (at least 2 hours)
2 tablespoons coconut oil
2 tablespoons honey
1 teaspoon fresh ginger
1 tablespoon natural vanilla extract
Juice of 1 small lime
Dash of cinnamon or spice of choice
Dash of sea salt


Blend all ingredients together in a blender until smooth and creamy. Serve and enjoy as is or chilled with chopped or diced fruits such as papaya, pineapple, banana or berries.
